Includes: 

  • 5 lb of cross cut shank rounds

Recipe Suggestions: 

  1. Classic Osso Buco:

    • Season and brown beef shanks, then sauté onions, carrots, and celery.
    • Return shanks to the skillet, add beef broth, diced tomatoes, and white wine.
    • Simmer with herbs for 2-3 hours. Serve over polenta, garnished with gremolata.

  2. Slow-Cooker Osso Buco:

    • Sear seasoned beef shanks, transfer to a slow cooker with onions, carrots, celery, broth, tomatoes, and red wine.
    • Season with Italian herbs. Cook on low for 6-8 hours. Serve with mashed potatoes or bread.

  3. Braised Beef Shank with Root Vegetables:

    • Sear seasoned beef shanks, then sauté onions, carrots, parsnips, and celery root.
    • Return shanks to the pot, add broth, red wine, and bay leaves.
    • Braise in the oven at 325°F (160°C) for 2-3 hours. Serve with roasted root vegetables.
