Recipe Suggestions:
Classic Mediterranean Beef Kabobs:
- Ingredients: Meriwether Farms Kabob, bell peppers, red onions, cherry tomatoes, zucchini, mushrooms.For the marinade: olive oil, lemon juice, minced garlic, oregano, thyme, salt and pepper.
- Instruction: Marinate the beef cubes for at least 2 hours of overnight for deeper flavor. Thread the beef and vegetables alternatively onto skewers. Grill over medium-high heat, turning occasionally until the beef is cooked to your liking and the vegetables are tender and slightly charred. Serve wit a side of tzatziki sauce and warm pita bread.
Asian-Inspired Sesame Beef Kabobs:
- Ingredients: Meriwether Farms beef cubes, green bell peppers, onion wedges, and pineapple chunks. For the marinade: soy sauce, brown sugar, minced garlic, ginger, sesame oil, and a splash of rice vinegar.
- Instruction: Marinate the beef for at least 1 hour. Skewer the beef, peppers, onions, and pineapple chunks alternately. Grill on medium-high, brushing occasionally with the remaining marinade, until the beef is nicely glazed and cooked through. Sprinkle with sesame seeds and serve with steamed rice and a drizzle of sriracha mayo for extra zest.
Southwestern BBQ Beef Kabobs:
- Ingredients: Cubed or Ground Beef from Meriwether Farms, corn on the cob (cut into rounds), red onion chunks, and diced bell peppers. For the BBQ marinade: your favorite BBQ sauce mixed with a little olive oil, lime juice, smoked paprika, cumin, and a dash of chili powder.
- Instruction: Marinate the beef cubes, or mix the ground beef in the BBQ mixture for a few hours. Assemble the kabobs by alternating beef, corn, onion, and peppers on the skewers. Grill over medium heat, turning and basting with extra BBQ sauce until everything is nicely caramelized and cooked to perfection. Serve with a fresh cilantro-lime coleslaw and grilled cornbread on the side.
