Pan-Seared New York Strip Steak Recipe
Ingredients:
- 2 New York strip steaks (1-1.5 inches thick)
- 2 tbsp olive oil (or your preferred cooking oil)
- 3-4 cloves garlic, smashed
- 2 sprigs fresh thyme (or rosemary, if you prefer)
- 1-2 tbsp unsalted butter
- Salt and freshly ground black pepper to taste

Prep the Steaks
Take your New York strip steaks out of the fridge about 30 minutes before cooking. This allows them to come to room temperature, ensuring an even cook. Pat the steaks dry with a paper towel to remove any moisture—this helps create a better sear. -
Season the Steaks
Generously season both sides of the steaks with salt and freshly ground black pepper. Don't be afraid to use a good amount; it helps build a flavorful crust. -
Heat the Pan
Heat a large cast iron skillet (or another heavy-bottomed pan) over medium-high heat for about 3-4 minutes until it’s very hot. Add the olive oil and swirl to coat the bottom of the pan. The oil should shimmer but not smoke. -
Sear the Steaks
Carefully add the New York strip steaks to the hot pan. Let them sear without moving them for about 4-5 minutes. You should hear a sizzle. This will create that nice, caramelized crust on the steak. -
Flip and Add Aromatics
Flip the steaks to the other side and immediately add the smashed garlic cloves and thyme (or rosemary) sprigs to the pan. Drop the butter into the pan as well. As the butter melts, spoon it over the steaks to baste them. This infuses the steak with more flavor and helps keep it juicy. -
Cook to Desired Doneness
For a perfect cook, continue cooking the steaks for another 3-5 minutes, depending on how you like your steak:- Medium-rare: 130-135°F
- Medium: 140-145°F

A meat thermometer is the most reliable way to check the internal temperature and get your steak just right.

Rest the Steaks
Once your steaks are cooked to your liking, remove them from the pan and let them rest on a plate for 5-10 minutes. This allows the juices to redistribute and ensures a tender, juicy steak. -
